Convotherm Passes the Test at Union County Schools

For a small county with limited resources, Union County wanted the best upgrade in performance and efficiency for their new kitchen equipment.

School cafeteria manager Christy Baggett said the rolls and biscuits are their signature items and they make them from scratch every morning. With their new Convotherm combi, they never have to turn or rotate the pans for even browning, saving valuable time and labor.

They use the core temperature probe extensively, so there's no guesswork or waste. This eliminated a big problem because it was impossible to determine the proper doneness of their selections.

Overall, they've increased their production by about 30% due the speed, efficiency and accuracy of their Convotherm combi oven.

Lake Butler Elementary has a double stack OGB6.20 model Convotherm by Cleveland Combi. Each compartment has the capacity for seven 18" x 26" sheet pans and fourteen 2.5" full size steam table pans.
